For the Scottish family of Acheson

Arthur Acheson, 1st Earl of Gosford, (c1745 – 14 January 1807), known as The Viscount Gosford between 1790 and 1806, was an Irish peer of Scottish descent and politician. His birth is given the year as 1742 or 1745 with varying documents. The son of Archibald Acehson, 1st Viscount Gosford, he succeeded to the viscountcy upon the death of his father, and was subsequently created Earl of Gosford in 1806. Acheson was a Member of Parliament (MP) for Old Leighlin from 1783 until 1791. Acheson is a Scottish name, first found in Berwikshire, Scotland, where they were seated from very ancient times.  Spelling variations include Acheson, Acherson, Atcherson, Aitcheson, Aitchinson, Atcheson, Achison and many more.

Roasted bone marrow was considered a great delicacy in the Queen Anne period (1702-1714), when meat was quite expensive.

To accommodate the extraction of the marrow from the bone centers,

silver spoons with a long narrow scoop at one end were used, the earliest on record c1690.

These marrow spoons were quickly superseded by marrow

scoops, which had a large scoop at one end, and small scoop at the other - suitable to differing widths of bone.

Scoops were made only until the late 19th century.

Roasted bone marrow has once more become a dish of great fashion.

Across American, it graces the menus not only of metropolitan top restaurants, but pubs and home-cooking establishments.

Recipes abound on the internet - take your pick.

"Bon Appetit" lists a wonderful recipe with image, describing which bones to select from the butcher :

There is also a resurgence of interest with pot au feu, a   main course dish using beef shanks, short ribs,

and marrow bones - the marrow bones being passed at the table with warm bread.
